A classic peanut butter cookie can take many forms, and with ours, we’ve departed from that flour-based version with the familiar fork print across the top for a lacy, honey-sweetened version that feels more fanciful but keeps the ingredient count to a minimum and focused on highlighting local producers.

We were planning an entirely peanut-free operation–in no small part, because peanuts do aren’t grown here in New York, but I had to change my mind when I saw what Jessica from Saratoga Peanut Butter Company was up to.

Her background in fitness and nutrition led to the creation of the most unique peanut butters we’ve ever seen, and we highlight them in our regular lace cookies along with pop-up surprises at our farmer’s market stops, incorporating banana-raisin Monkey Boy, blueberry-pepita-chia Adirondack Jill, and cranberry-sunflower-flax Adirondack Jack.

Ingredients: Saratoga Peanut Butter Company Plain Jane peanut butter (dry roasted peanuts, kosher salt), Russell Maple Farm wildflower honey, Billington’s dark Muscovado sugar, Golden Valley Flax flax seeds.
