In this gluten-, dairy-, egg-, and nut-free taste on the classic peanut butter treat, we meld sunbutter from New York roasted Once Again with freshly ground sunflower seed flower to create your new favorite sandwich cookie. Pair it with one of our jams or your favorite chocolate spread! Sunflowers are the lesser-known fourth sister of the Native American three sisters farming practice in which beans grow up corn stalks while squash fan out to keep weeds at bay. Sunflower plants would often take the place of corn in this layout, and we utilize this quick-growing, highly nutritious plant in our treats wherever we can.

We shouldn't play favorites, but there's something about a waffle cookie that gets me every time. These cookies nod both to the Italian families that run many of our area's wineries today and the wafers and stroopwafels 17th-century Dutch settlers of the Hudson Valley. Our vegan and gluten-free take on this classic treat takes these delicate cookies' flavor up several notches with deep, rich buckwheat flavor and oats from Gianforte Farm we grind fresh on-site just before baking.

Welcome to, what we think of as, the everyday chocolate chip cookie. This is literally the cookie that started it all, thanks to a French buckwheat cookie recipe shared by author and former Chez Panisse pastry chef David Lebovitz. Most of us don't actually eat chocolate chip cookies every single day, for a variety of reasons, but that's not to say we don't crave a little something with our tea or coffee. By removing the gluten, dairy, and chocolate from your average chocolate, and weaving in the health benefits of superfoods sunflower, buckwheat, and blueberry, this anti-oxident, protein, and nutrient-filled snack is ready for you any time of day.

We were planning an entirely peanut-free operation--in no small part, because peanuts do aren't grown here in New York, but I had to change my mind when I saw Jessica from Saratoga Peanut Butter Company was up to. Her background in fitness and nutrition led to the creation of the most unique peanut butters we've ever seen, and we highlight them in our regular lace cookies along with pop-up surprises at our farmer's market stops, incorporating banana-raisin Monkey Boy, blueberry-pepita-chia Adirondack Jill, and cranberry-sunflower-flax Adirondack Jack.

Hedgehog Cookies

When we found out that Stony Brook WholeHeartedFoods was working with pumpkin and butternut squash seeds that are usually thrown away by the food industry to create roasted nut oils and snack seeds, we knew we had to find a way to support this important work and bring their seeds to more locally-focused eaters. Their brined and roasted pumpkin (pepita) and butternut squash seeds paid perfectly with oats grown in the same area in these rich, protein-loaded. Our first group of tasters, who loved them so much that these were the first things they wrote us about across the board, called them ``hedgehogs`` because of their shape, and we think baby hedgehogs are up there on the list of the cutest baby animals, so the name stuck!
