Emmer, along with einkorn, is thought to be one of the grains that crossed to create spelt and also a parent of the durum wheat used in pasta today. It’s a grain so ancient that it precedes pre-history, so we’re in the dark about much of its origin, but one thing is clear: it has an exceptional flavor. As with many things that taste great, but have low yields and require extra work to produce, emmer fell by the wayside as modern wheat took over. We’re delighted the intrepid Martens Farm has started growing it here New York so that folks can once again enjoy its rich flavor.
