We’ve been eating versions of this cake for many years, sometimes layered with jam, sometimes with a chocolate-hazelnut spread for a birthday treat, and sometimes plain with no topping or syrup just as something light to have with tea.
For Hudson Valley Treats, we’ve zeroed in on serving it with a simple, but sumptuous, honey syrup that infuses every crevice of their airy cake with delightful, but lightly flavored, syrupy goodness.
We’ve recreated a flavor that we’ve been chasing for years, since stopping at a humble mountain-top snack shack during our 10-year anniversary trip in Santorini. Dehydrated from a scorching mountain hike with no tree cover and deeply sunburned from the unfiltered sun reflecting off the water, we were so thankful for the opportunity to stop in the shade when we saw the chance.
Along with refreshing drinks, we couldn’t help but grab a slice of the modest cake next to the register. We went back for a second. And could have had a third! The simple cake was the most basic Greek treat, but perfect to us: walnut cake soaked in local honey.
Each week, we change up the honey with this cake, sometimes focusing in on a specific type of honey, such as delicate orange blossom or rich, dark buckwheat honey. Other weeks, we infuse the honey with our own flowers, such as lilac and cherry blossoms in the spring and lavender and rose flowers in the summer.
This contains multiple servings of this product. You will receive a 9 inch by 9 inch foil-wrapped unit. The individual portions are not pre-sliced. The pan is not included. Each pan includes 9 portions.
