Allergen warning: We do process wheat/rye/spelt flour on-site, both milling and baking breads, so if you have an anaphylaxic issue with gluten or something where very trace amounts of wheat/spelt/rye could cause you issues, we would not recommend any of our products.
There are times when you just need a simple slice of chocolate cake. Nothing fancy—no frosting or chocolate chips—you don’t want to feel too glutenous! It’s just time for a treat.
We think of this cake as a healthier, feel-good take on the classic birthday cake or chocolate slab cake that you more often see dished up in non-compostable plastic to-go boxes in the vendors in the depths of Penn Station and grab for a long bus ride.
Currently, we’re crafting this cake around the cassis berry shrub from The Hudson Standard, which is their classic flavor, but as they roll out seasonal flavors (we’re experimenting with strawberry rhubarb right now!), we’ll change the drinking vinegar component of the cake to suit the season.
What is a shrub? (Also known in many Asian cuisines as “drinking vinegar.”) As The Hudson Standard says,
Shrubs originate from a Colonial American tradition of blending fruit, spice, vinegar and sweetener to make a tart and delicious syrup. Our shrubs make fantastic cocktail mixers, or when combined with seltzer, a refreshing natural soda. All of our shrubs use a base of organic apple cider vinegar, real fruit and botanicals, and natural organic sweetener.
Previous shrubs from The Hudson Standard throughout the season have included Raspberry Verbena, Three Pines, Pear Honey Ginger, Peach Lavender, and Apple Coriander Maple.
