Bolted Barley Sourdough Bread


Barley is one of the most nutritious grains out there (maybe this is why beer sustained much of Europe through the Middle Ages?!). But you don’t usually see it in a bread. Even though it contains gluten protein, it doesn’t have enough to create a nice structure in the bread. You end up with hardtack: tooth-breaking flat bricks. In this bread, we’ve mixed as much barley as we can in with our Glenn wheat to create a boule that looks and tastes like modern bread, but still takes advantage of everything barley has to offer in terms of sweet, nutty taste and nutrition.
