When you look around during a winter like we’ve had this year, the world is often reduced to three colors: white snow, stark blue sky, and hardy green pines. We wanted to create a granola that captured the season, so we zeroed in on this palette and the theme of preservation. Blueberries come to the granola two ways—preserved in maple syrup and dried—sunflower seeds present as their shelf-stable oil, and freshly hulled buckwheat is roasted to capture its freshness.

Modern Japanese-style cafes have been making their mark on New York City for years with elegant, technically perfect cakes fusing French baking style with Japanese flavors. The most pervasive aspect of this phenomenon is matcha-flavored everything.

The matcha tea ceremony is something inherent Japanese—deliberate, detailed, and done with due devotion to craft, calm, and concentration. It centers around using a bamboo tool to perfectly mix and froth green tea powder into hot water in handmade ceramic bowls. Matcha flavoring, on the other hand, is a dizzying health food crazy, and it’s easy to feel the benefits are fake or over-hyped.

For our “matcha flavoring” we grind green yaupon tea leaves fresh just before mixing up your granola. This means that there is less nutrient loss and we are 100% sure of the quality and sustainability of the green tea at all steps in the process.

Green yaupon tea comes from the only caffeinated plant native to North America that has been drunk for millennia for its anti-inflammatory properties, antioxidants, taste, theobromine (the mood enhancer in chocolate!), and, of course, natural caffeine.

In Japanese matcha ceremonies, the green tea has no sweetener added and is highly bitter. Most green tea lattes and baked goods re-address that balance with honey or sugar.

Instead, we rely on another ingredient with a deep local native history—maple. This granola includes two types of maple, a regular syrup and one infused with wild blueberries picked at the height of the season.
